Well friends, the frost is coming and our tomatoes will not be happy. The time has come to wind down the tender plants in the garden and save what we can. When I pulled the tomatoes, I ended up with about 10# of ripe red tomatoes and 18# of green tomatoes. These were not blushing at all…totally green. Now what? Green tomatoes are rich in vitamins A and C, potassium, and antioxidants so we can’t let them go to waste! How about we use those green tomatoes to make some delicious green tomato salsa – otherwise known as “mock salsa verde”.
On a side note, I found that the usual blanch & ice-bath method to remove the skins took much longer than it does with ripe tomatoes – about 4-5 minutes per batch as opposed to 30 seconds with ripe tomatoes. However, I don’t like the skins so I took the time to remove them. Be the boss of your own kitchen though…if you don’t mind the skins, go ahead and save yourself the time.
Be sure to leave 1/2″ headspace. Debubble, adjust headspace by adding or subtracting salsa, wipe rims, place lid on jar and screw the band down to fingertip tight. As this is a water-bath canning recipe, after jars are loaded into the canner, make sure to cover them with atleast 1″ of hot water. Bring to boil and process pint jars for 20 minutes. Remove canner lid, wait 5 minutes and then remove the jars. Cool and let sit for 12-24 hours undisturbed. Remove bands, wipe jars and store.

- Tacos and Burritos: Use it as a topping for tacos, burritos, or quesadillas to add a zesty kick.
- Grilled Meats: Pair it with grilled chicken, pork, or fish. It complements the smoky flavors beautifully.
- Egg Dishes: Spoon it over scrambled eggs, omelets, or breakfast burritos for a flavorful breakfast.
- Salads: Drizzle it over salads as a dressing or use it as a flavorful topping for grain bowls.
- Sandwiches and Wraps: Spread it on sandwiches or wraps for added moisture and flavor.
- Soups and Stews: Stir some into soups or stews to brighten the flavor.
- Sautéed Vegetables: Mix it into sautéed or roasted vegetables for an extra zing.
- Pasta: Toss it with pasta for a unique twist on a traditional dish.
- Baked potato topper: Top your baked potato with it and add some of your other favorite toppings.

Delicious Green Tomato Salsa

This flavorful combination of fresh green tomatoes, onions, peppers and spices is sure to become a favorite pantry staple!
Ingredients
- 14 cups green tomatoes
- 10 hot peppers (jalapeno, etc), I used 2 Hungarian wax, 2 poblano, and 6 jalapeno)
- 4 cups red onions, chopped
- 4 cloves garlic, minced
- 1 cup lime juice
- 1 cup fresh cilantro, chopped
- 4 tsp ground cumin
- 2 tsp dried oregano
- 2 tsp salt
- 2 tsp black pepper
Instructions
To make the Salsa:

In a large heavy stock pot, combine tomatoes, peppers, onions, garlic, lime juice, cilantro, cumin, oregano, salt & pepper. Bring to boil over medium-high heat, stirring constantly. Reduce heat to a gentle boil for 10 minutes, stirring frequently.
To can the salsa:

Prepare 8 pint jars, lids and bands for water bath canning. This is a hot pack so your jars will need to be hot.
Ladle hot salsa into hot jars, leaving a 1/2″ headspace.
Debubble and add or remove salsa as needed to maintain the 1/2″ headspace.

Wipe rims with a cloth dampened with vinegar. Place lids on jars and screw bands to fingertip tight.

Place jars in canner and add enough hot water to the canner to cover the jars with atleast 1″ of water.
Bring to boil.
Process pints for 20 minutes.
Remove canner lid once 20 minute processing time is complete.
Let jars sit in canner uncovered for 5 minutes then remove and place on your counter on a towel.

Let sit and cool undisturbed for 12-24 hours.
Remove bands, double check seals and wipe down jars.
Label jars indicating contents and date of packing.
Store for future use.
