Superfood Granola – great for gifting!
Giving the gift of homemade goodies that come from the heart of your home is such a practical way to tell something that they mean the world to you. Taking your precious time and making something with your own two hands is always a step above store bought. This granola is a favorite for gifting because it is so versatile. It’s gluten free (if you use GF Oats) and can be enjoyed straight out of the jar as an on-the-go snack, on top of your favorite yogurt or even makes a fantastic healthy crunchy topping for ice cream!
If you’ve priced store bought granola lately you’ve probably experience the same “sticker shock” I have. Wow – almost $7 for a few servings in a 12 oz bag?? Friends, we can do better. Best of all, this recipe is flexible enough to use what you have on hand for nuts and dried fruits.
No oat flour? No problem!
One thing I don’t generally keep on hand is oat flour but I found a solution that works beautifully. For the 1/2 cup needed for this recipe, I simply scoop some rolled oats into my Ninja blender and blend it dry until I have 1/2 cup of oat flour.
Easy peasy! For the 1/2 cup of flour, I think I used about 3/4 cup oats but you can be the boss of your measurements here.
There are literally dozens of brands of granola on the shelf today. This recipe is simple, very flexible only has ingredients that I can pronounce (no weird gums, stabilizers or preservatives), and full of aroma and spice. Another reason to love it? Can we just take a minute and appreciate all of the lovely nutrition from the chia seeds, flax, oats, nuts and coconut oil. Honestly, it feels wonderful knowing that we can nourish our bodies with these healthy superfoods so easily.
Homemade granola with coconut oil, honey, flax & chia (Gluten Free!)

This granola is perfect for snacking on the go or paired with your favorite yogurt for a delicious nutrition packed breakfast. It's wonderfully good on frozen yogurt or ice cream! Sweetened with raw local honey this will satisfy any sweet tooth! Use whatever nuts and dried fruits you have on hand and it will turn out perfect every time!
Ingredients
For the dry granola mix:
- 4 cups rolled oats
- 1/2 cup oat flour
- 4 Tbls flax meal
- 4 Tbls chia seeds
- 3 cups chopped raw nuts of choice, use what you have on hand (walnuts, pecans, almonds, pepitas, sunflower seeds, etc)
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1/2 tsp sea salt, (I use Redmond Real salt here)
For the granola syrup:
- 1/2 cup coconut oil
- 2/3 cup raw honey
- 2 tsp vanilla extract
Add-ins (Optional, after bake)
- 1-1/2 cups any dried fruit, small pieces, (dried cranberries, blueberries, diced apricot, or raising work well)

Preheat oven to 300 degrees F & line 2 shallow baking sheets with parchment.
Pro Tip: Crinkling the parchment into a ball before flattening it in the pan helps it conform to the corners well.

In a large bowl, combine oats, oat flour, flaxseed meal, chia seeds, chopped nuts or choice, cinnamon, nutmeg, cloves & salt and set aside.

In a small saucepan, combine coconut oil, honey and vanilla extract. Stir frequently over low heat until coconut oil is melted completely.

Pour melted coconut oil mixture over dry ingredients and mix well. Mix until completely coated. I typically do this with a big spatula but sometimes I use my hands to ensure complete coverage.

Spread the coated granola mixture into the 2 parchment-lined baking sheets and bake for 20 minutes (about 1/2 in each pan).
Stir the granola after 20 minutes and return to oven for another 15-20 minutes or until the granola begins to slightly brown.

Once granola is slightly brown, remove the sheets from the oven and cool completely on the baking sheets. You want the little clumps to stay together and allowing the granola to cool undisturbed will help this. Once cooled, transfer to an airtight container.
For best quality – use within 7-10 days
Makes about 15 servings.
