Taco Cornbread Bake – Delish!

Seriously…so good! This recipe was born in the kitchen one day that we had some family helping with projects that decided to stay for supper. All I had thawed was hamburger and I had 8 people to feed. So, off to the pantry I went to see what I could throw together. In the great game of extending what you have, casseroles like this always come to the rescue!

Here is how to throw it all together.

Start by browning your hamburger and onions
Add in all the goodies: salsa, corn, black beans, taco seasoning and water
Top with cheese – YUM!
Next, pour (or spoon) the corn bread mixture over top. Be sure to spread evenly without disturbing the cheese underneath.
Bake at 350 for about 45 minutes
Ta-dah! Dinner is served and you are a genius!

This dish is so easy and so satisfying! Seriously a great way to stretch some hamburger to feed a crowd. Pair this with a lettuce salad or a side of fruit and you can stretch it even further. This comes together so quickly that it leaves plenty of time for you to visit with your impromptu guests while appearing completely unfazed by the last minute dinner plan. In the end, you’ll have minimal dishes to wash, giving you less clean up and even more time to visit. We love that.

This reheats beautifully too…IF you have any leftovers!

So next time you’re in a pinch, just go grubbing through the pantry and throw this together. It’s always wise to keep basics like frozen corn, salsa and black beans in stock just in case!

Serve it up with a dollop of sour cream and some green onions if you have them.
