We love a good fresh salad with a variety of veggies! We eat salad pretty much every day. I don’t know about you but I absolutely dislike buying salad dressing at the grocery store. Not only is it expensive (sometimes as much as $4 per bottle), but many of them have ingredient labels containing things I can’t even pronounce, like (what even are they there for??). I’ve turned to making my own for many reasons.
- Freshness and Flavor: Homemade dressing often tastes better than store-bought. You can adjust the ingredients to suit your taste.
- Scale: Make as much or as little as you need. No need to commit to a big bottle.
- Control Over Ingredients: You can choose high-quality oils and vinegars, and avoid preservatives and additives.
- Customization: You can experiment with flavors, adding herbs, garlic, or sweeteners to make it uniquely yours. More cayenne, less cayenne – you’re the boss of your kitchen!
- Healthier Option: You can create a dressing that’s lighter and more nutritious than many commercial options. No more ingredients that you can’t pronounce.

While we do enjoy a simple splash of EVOO & balsamic vinegar, I’ve been dabbling with a bolder option – enter the Best Balsamic Dressing Ever!!
Step by step:
Once your chia and water have formed a “gel”, combine chia gel, balsamic vinegar, olive oil, mustard, garlic, cayenne, salt & pepper in a blender. Process until well combined. If it seems too thick, just add a splash of water and pulse again.
Continue to adjust the water until your dressing is at a consistency that you like. Remember, you are the boss of your kitchen! Make it how YOU like it!

Best Balsamic Dressing Ever!!

Ingredients
- 2 tsp chia seeds
- 1/4 to 1/2 cup water
- 1/4 cup balsamic vinegar
- 2 Tbls mustard of your choice, stone ground or Dijon are great!
- 4-6 cloves garlic, minced
- 1/8 to 1/4 tsp cayenne pepper
- 1/4 tsp fresh ground black pepper
- 1/2 tsp sea salt
- 1/4 cup extra virgin olive oil

In a small bowl combine chia seeds and water. Set aside to thicken for 10 to 15 minutes.

Once chia and water have formed a “gel”, combine chia gel, balsamic vinegar, olive oil, mustard, garlic, cayenne, salt & pepper in a blender. Process until well combined & emulsified.

Add additional water as needed to thin to desired consistency.
