
Our favorite Monster Cookies – packed with Oats & Peanut Butter

So as long as you check all the ingredients to make sure they’re gluten-free, these are a great option for those on a gluten-free diet. Personally, I think they belong on the breakfast menu!
These cookies freeze VERY well. (If you can keep them frozen without your family stealing them all!)






PRO TIPS:
I dot extra M&M’s on top of each blob of cookie dough on the baking sheet. This ensures that they will be extra pretty when they are all baked up and ready to eat.
Alternative ingredients to spice things up and make new recipes:
white chocolate chips
- pieces of oreo cookie
- different types of m&m candies (peanut, crispy… anything!)
- butterscotch chips
- I used natural peanut butter in mine and it worked out fine
- any other chocolate candies that you can find at the store!

Ingredients
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 2 cups brown sugar, lightly packed
- 2-1/2 cups peanut butter, rounded, *not to exceed 2-3/4 cups
- 6 eggs, room temperature
- 1/2 tablespoon Karo syrup or honey
- 2 teaspoons vanilla
- 4 teaspoons baking soda
- 9 cups oatmeal, old fashioned, *can use quick oats too
- 1-1/2 cups coconut, shredded
- 1-1/2 cups mini-chocolate chips
- 1-1/2 cups mini-M&Ms, *just add 4-1/2 cups of your favorite goodies

Preheat oven to 350°

In a large stand mixer (6-qt) cream together the butter, granulated sugar, brown sugar, peanut butter, and Karo syrup or honey until creamy

Add in the eggs, one at a time, until completely mixed

Next, add the vanilla, oatmeal, and baking soda. Mix until well combined

Stir in the coconut, chocolate chips, and M&Ms (you may want to do this by hand)

Line a cookie sheet with parchment paper and use a large scoop (about ¼ cup) to place cookies 2 inches apart. You can also use two spoons to place large ¼-cup-size portions of the dough on the cookie sheet. (If you prefer smaller cookies, that is fine too, but with a name like “monster”, go big!)

Bake at 350° for 8-10 minutes. Let cookies cool on the cookie sheet for 5 minutes before transferring them to a cooling rack

Notes
Tips for making legendary monster cookies:
- Mix the cookie dough with a stand mixer and the paddle attachment at a low speed for best results (a hand mixer works, too)
- Take around 2 tablespoons of dough and roll it into cookie dough balls with your palms before placing it on the parchment paper on the baking sheet for normal-sized cookies. I have found that a 1/4-cup-size cookie scoop works best.
- For giant cookies, use a medium cookie scoop and place on the cookie sheet with enough room to spread and 1-2 extra minutes of baking time
- Let the eggs sit on the counter at room temperature before adding them to your large bowl (this will make nice and thick cookies)
- Quality vanilla extract can make a world of difference
