Seedy Whole Grain Dinner Rolls

These seedy whole grain dinner rolls a wonderfully easy option for a quick and hearty addition to any meal.

Equipment

  • 9x13 glass pan
  • mixing bowls
  • stand mixer paddle attachment & dough hook (you'll use both)
  • pastry brush (for egg wash)

Ingredients

  • 1 cup water, 110 degrees F
  • 1 tbsp molasses
  • 3 tbsp honey
  • 2 tsp active dry yeast
  • 1 cup all-purpose flour
  • 1-3/4 cup whole wheat flour
  • 1/4 cup teff flour
  • 1/2 tbsp vital wheat gluten
  • 2 tbsp oil I used Hazelnut oil but olive or avocado oil is great too
  • 3 tbsp sesame seeds
  • 3 tbsp poppy seeds
  • 3 tbsp flax seeds
  • 3 tbsp chia seeds
  • 2 tbsp millet
  • 2 tbsp sunflower seeds unsalted
  • 1 tsp salt
  • 1 egg

Instructions

Bloom the yeast:

  • Heat water to about 110 degrees F
  • Add molasses, honey and yeast to warm water
  • Stir together and let sit for 10 minutes until the top is bubbly (sort of like beer)

Add all the dry ingredients:

  • Add all flours, wheat gluten, seeds & salt.
  • Mix using the paddle attachment until all combined.
    Then switch to the dough hook for your mixer.
  • Using the dough hook, knead the dough for about 8-10 minutes.

Rest and rise:

  • Remove the doughball from the mixing bowl and drizzle a small amount of oil (I used Hazelnut) into the bowl. Place the doughball back into the oiled bowl and rotate the dough ball to coat with oil from the bowl (very light).
  • Cover with a damp towel and allow to rise in a warm place for 1 to 1-1/2 hours or until double in size.

Shape:

  • Lightly grease a 9x13 glass baking dish.
  • Remove dough from bowl and knead 3-6 times to redistribute the yeast.
  • Weigh your doughball and divide by 12. This will tell you how much each roll should weigh. (Mine were about 85 grams each)
  • Divide the dough into 12 equal pieces and shape into balls, pinching the bottoms to create a bit of tension on the roll.
    Pick up any seeds that fall out of the dough as you are shaping it by simply blotting your work surface with your dough ball.
  • Place all 12 dough balls into your lightly greased glass baking dish.
    Cover pan with a damp towel and place in a warm spot to rise for 1 hour.

Bake:

  • Preheat oven to 350°℉
  • Lightly beat 1 egg with a fork.
    Using a pastry brush, apply egg wash on top of each dinner roll.
  • Bake for 18-20 minutes, until golden brown.
  • Serve warm ~ ENJOY!
  • Cool completely if freezing.
    If your house is on the cool side, you can preheat your oven to "warm", turn it off and let it cool for 10 minutes, then put the pan of rolls in to rise.
